If you’re a kheer lover, and want to swap out rice for something healthier, then quinoa can be an option. Quinoa is loaded with several amino acids, vitamins, potassium, iron and fiber and studies show that it can also help people with diabetes manage their blood sugar levels.
Nutritionist Lavneet Batra recently took to her Instagram account to share the recipe of Quinoa Apple Kheer which is a great mix of health and taste.

Material:
cup cooked quinoa
1 tsp ghee
1 apple, finely chopped
750 ml milk
5-6 strands saffron
1 tsp ground cardamom
1 tbsp pistachios chopped
Sliced apples for topping
Instruction:
1. Heat ghee and quinoa in a vessel. Fry for 3-4 minutes till it becomes soft and add finely chopped apple, milk, saffron and cardamom to it.
2. Bring it to a boil and simmer for 35-40 minutes until the milk reduces by about 1/3 and the kheer becomes thick.
3. Shake well. Cool to room temperature, and then refrigerate for an hour or so.
4. Serve chilled, top with chopped pistachios and apple pieces.
A high protein energizer, this recipe will also help ease constipation. Batra says that it is rich in folate and protein which also makes it an ideal breakfast for pregnancy.
