The season of joys and festivities has finally arrived! With Christmas and New Years knocking on our doors, most of us are finally getting ready to spend some quality time with our friends and family. Easy eggplant pakoras

This recipe from Chef Ranveer Brar is one for the books. Soft on the inside and crisp on the outside, these easy-to-make eggplant fritters will be a holiday favorite in your home in no time. Pakoras can be shallow fried, air fried, or even baked, depending on your preference.

* 8-10 eggplant slices, cut into ¼ inch thick
* 1 teaspoon of red chilli powder
* ½ teaspoon of turmeric powder
* ½ teaspoon of black pepper powder
* 1 teaspoon, lemon juice
* Salt to taste
*Frying oil
* For the dough
* 1 cup of besan / chickpea flour
* ½ cup, rice flour
* ½ teaspoon of chili flakes
* 1 tablespoon finely chopped coriander leaves
* ½ teaspoon of turmeric powder
* ¾ c. carambola seeds (ajwain)
* Salt to taste
* Water as needed

To treat

* Combine the red chili powder, turmeric, black pepper powder, salt, lemon juice. Rub the slices with the prepared mixture and set aside for 6 to 8 minutes.

* Mix all the ingredients for the dough, add a little water and prepare a dough of medium consistency so that it coats the back of the spoon. Do not add too much water at once.

* In a deep-bottomed / kadhai pan, heat the oil. When it is hot enough, dip the slices one by one into the dough and slide them into the hot oil.

* Fry them until golden and crispy. Do not fry them over high heat as this will burn the donuts. Do not overcrowd the pan / kadhai by adding too many slices at a time. Fry them in batches.

* Drain them on absorbent paper / paper towels.

* Serve them hot and crispy with the chutney / sauce of your choice

Christmas salad

This salad recipe from Masterchef Pankaj Bhadoria is perfect for brunch. It can be prepared in large quantities and stored in the refrigerator. Take a look here:


* 3 – 4 bunches of salad leaves
* ½ cup of cherry tomatoes
* 1/2 cup paneer cubes
* 1/2 cup chopped pineapple
* 1/4 cup of frozen cherries
* 1/2 cup cheese cubes
* 1/4 cup black olives
* 1/4 cup green olives
* 1/2 cup miniature corn
* For the dip
* 2 tablespoons of mayonnaise
* 1 tablespoon of tomato ketchup
* A few drops of tabasco sauce


* Take sheets of thermocol or polystyrene and cut them into triangles. Cover them with silver foil.

* Now pin the tree with salad leaves and cover the whole tree.

* Then take red cherry tomatoes, beets, chunks of cottage cheese, pineapples, glazed cherries, chunks of cheese, black and green olives, and miniature corn.

* Mount them on toothpicks. Distribute the rest of the cheese and berries on the plate.

* Mix mayonnaise and ketchup together to make the dipping sauce. Serve on the side with the salad.

Crispy Paneer Fingers

Chef Ranveer Brar’s snack depot is absolutely perfect for the holiday season. These crispy paneer fingers are packed with the goodness of paneer or cottage cheese; a powerhouse of proteins. Take a look at the recipe here:


For the dough–

* 4 tablespoons of refined flour
* 2 tablespoons of corn flour
* ½ teaspoon Italian seasoning
* 1 teaspoon of Degi red chili powder

* ½ teaspoon of black pepper powder
* 1 teaspoon of garlic powder
* Salt to taste
* Water as needed

Other ingredients-

* 250 g of Paneer
* 1 cup of breadcrumbs
*Frying oil

To treat

* Prepare the breadcrumbs and set aside

For the dough

* In a bowl, add the refined flour, corn flour, Italian seasoning, degi red pepper powder, black pepper powder, garlic powder, salt to taste.

* Add a little water to make a paste just enough to coat the paneer pieces well.

* Dip the paneer fingers in the dough then roll them in the breadcrumbs. Repeat this until the paneer fingers are double breaded.

* Repeat this step for the rest of the paneer pieces.
